Summer is the season of the grill. Beef and pork are the usual suspects, but what if you want something a little lighter? And something that’s not chicken? A whole saltwater fish, like pompano, is a quick, flavorful alternative that’s easy to prepare. Pair it with grilled summer vegetables and some basmati rice to make a meal fit for royalty. It all starts with the seasoning. Fresh herbs like thyme are a great garnish, but they also serve as part of a spice mixture called za’atar that’s used in a lot of middle eastern cooking. Due to the lemony taste in sumac, another key ingredient, za’atar is the perfect seasoning for grilled zucchini and summer squash.

Chipotle Zucchini & Fennel Dip

Zucchini is the most versatile of squashes. It can be fried, roasted, baked into bread, served fresh with salad, and the list goes on. Its springy texture absorbs flavor exceptionally well, and its subtle bitterness is highlighted best with a zesty sweetness (which is probably why it tastes so good with a little sprinkle of lemon juice). But for every zucchini lover, there is a loather who needs to see the light. Farro presents a way to disguise zucchini in plain sight.

Chipotle Zucchini Fennel Dip

  • 2 small zucchini, trimmed and cut into 3/4-inch cubes (for 1 1/2 cups cubed zucchini)
  • 1 medium-sized fennel bulb, trim, cored, and cut into 1/4-inch slices (for 1 1/2 cups sliced fennel)
  • 6 tablespoons extra virgin olive oil, divided
  • smoked sea salt (or regular sea salt)
  • freshly ground black pepper
  • 3 tablespoons chipotle hot sauce, plus more for serving
  • 4 (1/2-inch thick) slices ciabatta, cut into triangles

For those who prefer the sweet, earthy aroma of tequila, here’s a drink for all seasons. Tomatoes are high in vitamins A, B6, C, K, potassium, and other nutrients, all of which aid circulatory and nerve health. Add that with fresh onions, garlic, jalapeño, parsley, lime, and horseradish, and you get a powerful formula that boosts your energy and immunity. Make sure to use 100% agave tequila to reap the metabolic benefits of this particular spirit. Though commonly made with bottled or canned juice, our recipe uses fresh tomatoes. Simply put all the ingredients in a blender and you’re good to go!

Blueberry Sour Cream Swirl

Ice cream: a pinnacle of childhood summer. The June solstice is right around the corner, and we at Farro simply cannot wait. We’re lucky to live right by a blueberry patch. Farmer Ken gave us the first pick of the season. One might initially wrinkle their nose at the idea of sour cream in their ice cream, but this recipe makes a strong case. The slight tang of sour cream balances the light sweetness of ripe blueberries for a more refreshing experience. Plus, its rich and smooth consistency also increases the final product’s melting point, which means your ice cream will last longer under the hot sun.

Cucumber Tomato Salad

Heirloom tomatoes are best when eaten fresh. They tend to run small, like cherry tomatoes, so we recommend just halving them for salads. The fresh, grassy taste of cucumbers tend to go well with the tartness of tomatoes. Cut a slice to make sure the cucumber isn’t too bitter. If it is, just peel the skin. With just a simple dressing of balsamic vinegar, olive oil, garlic, and fresh garden herbs like oregano and tarragon, you get a delicious salad that’s quick and easy to make. Crumble in some feta for protein and a salty kick.

Roasted Cauliflower & Garlic Dip

Fun fact: One head of cauliflower has 472% of your daily vitamin C! It’s also an anti-inflammatory that’s rich in antioxidants. Eating it raw, however, is not something most people prefer, especially kids. We at Farro have a sneaking suspicion that dips and spreads were invented purely to trick children into eating their legumes and veggies. Making a dip out of cauliflower is easy and nutritious, as it cuts out most of the cream or fat that you'd use otherwise. All you have to do is cut it into florets and roast it with a whole head of garlic. Once they’re both soft enough to blend into cream, you can add a few tablespoons of olive oil and some toasted pumpkin seeds for a crunchy texture.

Grass Fed Burgers with Quick Pickled Shallots

Humanely raised animals live happy, healthy lives and contribute to a smaller carbon footprint. Lucky for omnivores, they also taste better. Grass-fed beef can be hard to come by without a local farmer’s market or butcher. You have to do your research, but if you find there’s none to be found, chances are your supermarket will still have it. 

Quick pickling is a great way to make your shallots, onions, and garlic last longer. It also adds a refreshing tang that offsets the heaviness of meat. Simply cook the spiced brine and pour over the things you want to pickle. You can wait until they’re chilled or serve them hot. If you’re feeling a little ambitious, you can also make a lemon aioli in place of mayo.

Making nutritious drinks in lieu of snacks is also an option. Farro has delved into the world of juicing and mixology to bring you beverages that are always a delight. Fresh ingredients are the secret. Some juices are ok to buy in bottles. Just stay clear of cans.

Ah, the classic Pimm’s Cup. It sounds cute but tastes very sophisticated. Originally from England, Pimm’s is a floral, herbal, and fruity liquor that aids digestion. When you mix in ginger ale/beer, some cucumber slices, mint, and lemon, you get a delicious, light, and not too sugary cocktail that provides a lot of relief from the summer heat. Whether you choose to turn on the cricket game or go to a local tennis match is up to you! Just don’t drink a Pimm’s Cup with your pinkie out.

Roasted Beet Wedges with Tzatziki

The humble beetroot is a fibrous and sweet anti-inflammatory antioxidant that helps protect against heart disease and cancer. Good for boiling, roasting, and pickling, this winter root keeps well in the fridge, so you can savor it all season long. We find that the optimal texture comes from boiling them first with the skin intact and then peeling them right before roasting. This procedure yields a soft center and caramelized skin. Garlicky tzatziki serves to complement the sugary taste but needs to be prepared the night before to absorb all the flavor. Not to worry, though. It only takes a few minutes to make, and then you simply leave it in the fridge overnight!

This is a drink the whole family can enjoy. Originally from southern Africa, the watermelon is a low-calorie fruit that helps you stay cool and hydrated. While it’s not rich in nutrients, when paired with lime and ginger you can create a more healthy, refreshing beverage. First thing’s first: you have to pick the watermelon. To make sure it’s ripe, hold the watermelon in your hands. If it’s light for its size, that means it’s not ready yet. Then—and this might be difficult if the melon is heavy—hold it in one hand and use the other to thump or flick the skin. Pay attention to whether or not it sounds hollow. If it has a dense sound, that’s good. Second, if the vibrations you feel in your other hand (the one holding the melon) feel tight, that’s a positive sign. A soft vibration indicates mealiness. Trust us, it’s easier than it sounds. Happy hunting!

Grilled Lemon and Chicken

It’s a shame that chicken often gets overlooked for the grill. As opposed to roasting or frying, cooking poultry over hot coals yields a smoky taste and crispy, yet less fatty, skin. That’s because the grease drips down into the grill only to rise again as flavor-imbued smoke. You want to be careful, though, because boned chicken requires more cooking time. The last thing anyone wants is charred chicken that’s still raw on the inside. We recommend piling the coals up on one side of the grill, so you have a cooler area for slow cooking. Now, for the marinade. We chose to make ours with lemon, garlic, and sea salt. Let it steep overnight for optimal flavor. Once it’s time to grill the chicken, brush the remaining marinade on every now and then for glazed crispiness.

Broiled Salmon with Spring Onion Risotto

More often than not, simplicity is both beautiful and delicious. You don’t need foie gras to make a meal fit for a king. Salmon is the kind of fish that doesn’t need much seasoning. Just lemon, green onions, and pepper are enough. If you want to add a kick, glaze the skin with bitter honey and cayenne. Because of its versatility, risotto pairs well with almost anything. It’s easy to make but takes time and attention. Don’t be daunted, though. Think of making risotto as a meditative practice. That’s one of Farro’s key values. We aim to make mindfulness and sincerity quotidian.

Asian Pear and Apple Pie

Autumn is the season for pie. Our CSA had a surplus of Asian pears, which are not commonly used for baked goods, due to their crispy texture and high water content. But we at Farro like to take the road less traveled. Asian pears are sweet and refreshing. What better way to compliment them than with the earthy undertones of Jonagold apples and the almost minty taste of bay leaf infused butter? For the crust, you can use a combination of regular and amaranth flour, the latter of which is rich in protein and adds a malty, nutty flavor to the overall mixture.

Sometimes masterpieces are created by accident, and by that, we mean just looking in our fridge for ingredients that are days away from spoiling. Perhaps the idiom we’re looking for is: necessity is the mother of creation. We had blackberries and peaches that absolutely had to be eaten. There were too many to consume in one sitting, so we decided to bake them. Cobblers are what we like to call “lazy pies.” No bottom crust is required, just an easy biscuit batter to top off the fruit mixture. Cobblers are obviously a little more messy when it comes to presentation, but sometimes you just have to revel in imperfection. Serve with a dollop of whipped or ice cream for a richer experience.

With this cake, we guarantee your first date won’t be your last. All puns aside, though, anyone who has a bite will ask for seconds, thirds, and even fourths. A generous helping of fresh ginger is what gives this recipe its unique, light, and tingly heat. When it comes to baking with fresh dates, you have to boil them, since the skin can be hard and crunchy. Make sure you taste one before you cook them all, though, because unripe dates are sour and chalky. Optimal color for a ripe date is amber, but yellow ones can still be used. The intense sweetness of ripe dates is offset with tangy apples like Pink Lady or Braeburn. Add an easy caramel sauce on top and you have a dessert that’s sure to stick with you.
