Autumn is the season for pie. Our CSA had a surplus of Asian pears, which are not commonly used for baked goods, due to their crispy texture and high water content. But we at Farro like to take the road less traveled. Asian pears are sweet and refreshing. What better way to compliment them than with the earthy undertones of Jonagold apples and the almost minty taste of bay leaf infused butter? For the crust, you can use a combination of regular and amaranth flour, the latter of which is rich in protein and adds a malty, nutty flavor to the overall mixture.
